First we have to drain the tofu of moisture. Line a plate with some paper towels. Drain the water from tofu. Place it onto the paper towels and wrap the paper towel around. Put a plate on top of the tofu. Place another weight on top such as a cutting board. Set this aside for at least 30 minutes.

In the meantime, chop the onions and combine with sugar, soy sauce and sake. Slice the garlic. Set aside.

Completely drain the tofu and blot dry with a paper towel. Cut into two slices and dredge in flour.

Cook the garlic slices in oil until golden brown and set aside. Add more oil and cook the tofu. Season with salt and pepper. After three minutes, flip it over and cook until nice and golden brown. Pour half the sauce on the tofu slices. Then flip over and pour the rest of the sauce over them. Cook on medium heat until the sauce slightly caramelizes.
